Ingredients

  • 1 bag of Ocean Mist Farms Roastables – Zesty Herb Broccoli Florets Roasting Kit
  • 4 boneless, skinless Chicken breasts
  • 2 Tablespoons Neutral oil
  • 1 teaspoon Oregano, dried
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Basil, dried
  • ½ teaspoon Paprika
  • ½ teaspoon Cumin
  • 1 clove Garlic, minced
  • Zest and juice of one Lemon
  • 1 Tablespoon Kosher salt
  • 2 cups Chicken or vegetable broth
  • 1 cup Long-grain rice
  • 2 Tablespoons Olive oil
  • ½ small Onion, diced
  • 1 Garlic clove, minced
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • Preheat oven to 450ºF with the rack placed in the center position.
  • Follow the bag preparation instructions for the Roastables Broccoli and place on a baking sheet.
  • Roast for 20 minutes until golden and tender. Once cooked sprinkle with garlic parmesan panko topping.
  • Combine all ingredients for the marinade and mix together in a large bowl.
  • Add in the boneless skinless chicken breasts. Cover and let marinade in the refrigerator for 2-4 hours.
  • Place a sauté pan over high heat and sear both sides of each chicken breast until browned.
  • Turn the heat to medium and cook for 7 minutes on each side or until the chicken reaches an internal temperature of 165ºF.
  • Rinse the rice under cold water until the water runs clear. Drain well.
  • Heat olive oil in a medium saucepan over medium heat.
  • Add diced onion and cook for 2-3 minutes, until softened.
  • Stir in garlic, salt, black pepper, cooking for 30 seconds until fragrant.
  • Mix in the rice and toast for 1 minute to coat with flavors.
  • Pour in the broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes (do not lift the lid).
  • Remove from heat and let sit, covered, for 5 minutes.
  • Fluff the rice with a fork before serving.
