Ingredients: 2 ripe bananas, mashed; 100 g canned chopped pineapple in juice, drained and 80ml (⅓ cup) juice reserved; 250 g wholemeal flour or plain (all-purpose) flour; 150 g light soft brown sugar; 1 1/2 tsp bicarbonate of soda (baking soda); 50 g coconut oil or butter, or oil of choice, plus extra for greasing; 1 tbsp vanilla extract; 2 tbsp apple cider vinegar; 1 egg (optional); 25 g coconut flakes, toasted; 1 handful pecans, roughly chopped; 100 g pecans or walnuts, chopped; 175 g full-fat cream cheese; 0.2 tsp sea salt; 1 tsp vanilla extract; 250 g icing sugar, sifted (confectioners' sugar); 200 g unsalted butter, softened
