Ingredients: 1 large orange sliced thinly; 100 g ground almonds; 100 g of polenta (or self raising flour); 1 1/2 tsp baking powder; 1 tsp salt; 200 g granulated sugar; 200 g softened butter; 3 eggs; 1 tsp vanilla essence; 2 tbsp vanilla or plain yogurt; zest of 1 large orange; 1 cup cranberry sauce, leftover or make a compote with 200gms of cranberries and 100 gms of sugar, and cook untill bubbling and thickened.
