- 1 grilled/roasted corn on the cob
- 1 cup peaches, chopped
- 1 cup tomato diced
- 1/4 cup red onion, finely diced
- 1 small garlic clove, crushed & finely chopped
- 3 tablespoons fresh cilantro, roughly chopped
- ¼ cup Extra Virgin Olive Oil
- 1 tablespoon White Peach Balsamic Vinegar
- ½ teaspoon fine sea salt
- ½ teaspoon freshly ground pepper
- 1-2 TBS green onions, sliced thin for garnish
