Ingredients

• 6 cups (140 g) baby spinach, coarsely chopped
• 1 tbsp (15 ml) olive oil
• 1 lb (450 g) ground turkey (see note)
• ½ cup (40 g) panko breadcrumbs
• 1 egg
• 1 garlic clove, chopped
• 3 cups (420 g) cherry tomatoes, various colours, halved
• 3 tbsp mint leaves, finely chopped
• 2 tbsp (30 ml) olive oil
• 1 tbsp (15 ml) white wine vinegar
• 2 tsp (10 ml) honey
