My Roasted Tomato Vodka Sauce is not a quick sauce, but is so delicious + satisfying + flavorful it's worth the time and patience involved!

Ingredients
- 1 yellow onion, peeled and quartered
- 6 cloves garlic, crushed
- 2 T olive oil
- 1/2 t red pepper flakes
- 1 t dried oregano
- 1 t dried basil
- 1 C vodka
- 2 (28 oz) cans fire roasted whole tomatoes
- sea salt + pepper
- 1 (7.6 oz) can table cream
- 1 C parmesan, grated
- 2 T fresh oregano, to garnish
- 1 lb pasta (I like to use penne, orecchiette or fusilli)
