• 3/4 cup minced onion
• 1 clove garlic, minced

• 1 can (6 oz) tomato paste
• 1 tablespoon yellow mustard
• 2 teaspoons brown sugar
• 1 teaspoon Worcestershire sauce
• 1 1/2 cups water
• salt and pepper, to taste
• 1 (12 oz) package hot dogs, cut into 1/2-inch pieces
• 2 tablespoons butter
• 2 tablespoons flour
• 1 1/2 cups milk
• 1/4 teaspoon smoked paprika
• 8 oz Wisconsin Colby-Jack Cheese
• Tortilla chips and minced onions, for serving
