Ingredients

• For the pie crust:
• 3 cups all purpose flour
• ½ cup shortening (cold)
• 1 stick butter cubed (cold)
• 2 tbls sugar
• 2 tsp white vinegar
• 6 tbls ice cold water (a little more or less, depending on consistency)
• Pie filling
• 4 cups cooked and mashed sweet potatoes
• 1 stick melted butter
• 2 tablespoons flour
• 3 eggs
• 2 tsp vanilla
• 3 cups sugar
• Crumble
• 3/4 cup all purpose flour
• 1/3 cup white sugar
• ½ cup brown sugar
• ½ tsp cinnamon
• Dash of salt
• 1 stick room temperature butter
• 3/4 cup oats
