• 2 cups diced fresh peeled peaches (when peaches are not in season you can substitute raspberries, strawberries or blueberries, or a combo of all three)
• 1 teaspoon fresh lemon juice
• ¼ cup plus 2 tablespoons granulated sugar, divided
• 1¼ cups all-purpose flour, plus more for dusting work area
• 1¼ cups whole wheat flour
• 2 teaspoons baking powder
• ¼ teaspoon salt
• ¼ cup brown sugar
• Pinch of cinnamon or ginger (optional)
• 6 tablespoons cold unsalted butter, cut into small pieces
• ⅔ cup heavy cream
