• ¾ cup plus 2 tablespoons cream
• ¾ cup sugar (divided)
• ¼ cup unsalted butter
• 1 teaspoon lemon juice
• 6 eggs (yolks and whites separated)
• 9 tablespoons all-purpose flour (sifted)
