Ingredients

• 3 tbsp Canola oil
• 1 cup chopped yellow onion
• ½ cup celery—small dice
• 2 tsp salt
• ¼ tsp cayenne pepper
• 1 tbsp chopped garlic
• 3 eggs
• 2 cups heavy cream
• 1 8×8 pan cornbread, crumbled
• 1 pint shucked oysters
• 1/8 cup minced parsley
• ½ tbsp dried sage
