• 2 cups coarsely shredded roast turkey
• 1/2 head cos lettuce - roughly torn
• 1/4 head wombok cabbage, finely sliced
• 2 carrots - fine julienne (matchsticks)
• 2 sticks celery - finely sliced
• 1 red capsicum, seeded & finely sliced
• 1/2 cup fresh mint leaves - rough chopped
• 1/2 cup coriander leaves - rough chopped
• 1/4 cup Thai basil leaves
• 1/4 cup sunflower seeds & pepitas - lightly toasted
• 2 tbsp sesame seeds - lightly toasted
