• 1 1/2 cups strawberries
• 1 1/2 tablespoons olive oil
• 2 tablespoons balsamic vinegar
• 1/4 cup 100% apple juice
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 1 1/2 cups edamame, shelled, prepared according to directions
• 1 15-ounce can beans, white, low sodium, drained and rinsed
• 1/2 cup red onion, chopped
• 2 tablespoons basil, chopped
• 1/2 cup feta cheese, crumbled
• 6 cups baby spinach
