Spinach and cheese layered bread bake - 9Kitchen

Ingredients

• 500g chopped frozen spinach, thawed and squeezed out as dry as possible
• 3 tablespoons butter
• 1 large brown onion, diced
• 2 garlic cloves, crushed
• 2/3 of a stale, but good Italian bread loaf, cut or torn into 2cm pieces
• 1½ cups grated cheese (swiss or gruyere is good)
• 300g feta cheese, crumbled
• 2/3 cup finely grated Parmigiano or Parmesan
• 9 eggs
• 2 cups milk
• ¾ cream
• 2 tablespoons Dijon mustard
• salt and pepper
• pinch of nutmeg (optional)
• pinch of cinnamon (optional)
• fried and diced bacon pieces (optional)
