Ingredients

  • 1 Beef filet or flank steak (per person)
  • Salt
  • 2 tbsp avocado oil
  • ½ Lemon, juiced
  • 1 tbsp chives
  • 2 tsp thyme
  • 2 tbsp parsley
  • 2 cloves garlic
  • ¼ tsp paprika
  • 1 tbsp Dijon mustard
  • 1 cup Butter
  • Cuso’s Hot Honey BBQ Rub
  • You’ll make the sauce first, so you don’t have to fuss with it when the steaks are hot and ready.
  • Melt the butter in a saucepan.
  • Add the paprika, pepper flakes, and lemon.
  • Follow with the rest of your herbs over a low heat
  • Let them simmer for 3-5 minutes, then remove the pan from the heat. Set aside.
  • Salt the steak on both sides and let it rest for 10 minutes. This will make for a crispier finish.
  • Pat the steak dry
  • Put a frying pan (preferably iron) with the avocado oil on high heat.
  • When the oil reaches 400F, gently sear the edge of the steak
  • Now lay the steak down for about 3 minutes per side. You can go a little longer if you’re unhappy with the sear.
  • Check your butter. If it’s too cool, warm it up a bit.
  • Cut the finished steak into slices using a well-sharpened kitchen knife .
  • Either drizzle the cowboy butter over the top or serve it on the side in a dipping bowl.
