Ingredients

• 1/2 TBS cumin
• 1/2 TBS Oregano +
• 1 onion finely chopped
• 2 garlic cloves, minced
• 1 cup orange juice
• 1/2 cup vinegar
• 1/2 TBS salt
• 2 Kg Chicken pieces
• – FOR ASSEMBLING THE DISH:
• 18 corn tortillas +
• 1/2 cup oil for frying
• 1 large spring of coriander chopped
• 2 cups finely chopped pineapple
• 1 onion, finely chopped
• 300 g Tussers cheese, grated
