This is an ice cream recipe that my family loves. It's similar to a French custard ice cream, but with a touch of honey and thyme.

- 1 pint carton double cream
- 8 fresh thyme sprigs
- 5 floz dark runny honey (plus such as Mexican extra for drizzling)
- 6 large egg yolks
- Orange Tuile Biscuits to serve
