Ingredients

• 1 lb ground chicken
• 3 1/2 cups mushrooms, chopped (mix of Cremini, Shitaki and button )
• 2 cups Spanish onion, chopped
• 4 tbsp garlic cloves, chopped
• 1 medium sweet red pepper, diced
• 1 tbsp fresh oregano, chopped
• 1/2 cup chicken broth
• salt, to taste
• 3 egg whites
• 1/2 cup low-fat, feta cheese, crumbled
• 4 phyllo pastry leaves
• cooking spray
• 30 fresh sage leaves
• 1 tbsp fresh thyme, leaves removed from stems
