Magic Mince - Rocket

Ingredients

• 500g Rocket Angus Beef mince
• 1 onion, finely chopped
• 1 carrot, finely chopped
• 1 celery stalk, finely chopped
• 1 garlic clove, finely chopped
• 250g button mushrooms, sliced
• 400g chopped tomatoes
• 1 tbsp tomato paste
• 2 cups beef stock
• 4 sprigs fresh thyme
• toast wholemeal bread
• sour cream
• a small handful of parsley
