Roasted green bean salad with Jersey royals, balsamic tomatoes and basil & loveage pesto - Bidfood

Ingredients

• 400g Frozen sliced green beans
• 6 Jersey royal potatoes
• 4 tbsps Loveage pesto (see below recipe) – alternatively use a good shop bought basil pesto
• 180g Jarred balsamic roasted tomatoes, drained – I used Belazu
• 1 Lemon juice and zest
• 2 tbsps Olive oil
• 25g Pine nuts
• top with Parmesan shavings
• Basil & loveage pesto:
• 1 Garlic clove, chopped
• 40g / a large bunch, chopped Fresh basil
• 50g Pine nuts
• 3 tbsps Olive oil
• 50g Parmesan
• 10g Fresh loveage, chopped
• 1 Lemon (juice of)
