• ½ tsp (2 mL) coconut extract

• 3 cups (750mL) vanilla ice cream
• 1 pineapple, cored and trimmed
• 1 cup (250 mL) brown sugar
• 2 tsp (10 mL) ground cinnamon
• 1 tsp (5 mL) ground ginger
• ½ tsp (2 mL) salt
• 1 tbsp (15 mL) butter
• 1 lime for zesting
