Ingredients

• 2 tomatoes, finely chopped
• 1 red onion, peeled and finely chopped
• 2 avocados, stoned, peeled and chopped
• 1 clove garlic, crushed, peeled and mashed to a paste
• 1 tsp each ground cumin and coriander
• 2-4 tblsp chopped fresh coriander
• 2–3 tblsp olive oil
• 1 lemon (juice)
• salt and pepper to season
