• Fried Corn Tortilla Chips : 1 stack stale corn tortilla chips
• Canola oil
• Macho Nachos :
• 1 pound Premio Sausage (choose your favorite), removed from casing and crumbled
• Fried corn tortilla chips
• 1 tablespoon garlic, chopped
• 1/4 teaspoon ground cumin
• 2 cups cooked pinto beans
• 1/2 teaspoon chili powder
• 1/4 teaspoon salt
• 1 1/2 cups pepper jack cheese, grated
• 1 1/2 cups sharp cheddar cheese, grated
• 1 small white onion, diced
• 5 large jalapenos, stemmed, seeded & sliced
• 1 cup sour cream
• 1 tablespoon fresh lime juice
• Chopped, fresh cilantro leaves, for garnish
