Carrot Cookies Recipe with Paradise Candied Orange Peel

Ingredients

• 1 cup butter or margarine, softened
• 1 – 1/2 cups sugar
• 2 eggs
• 1/2 teaspoon orange extract
• 4 cups all-purpose flour
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/2 cup milk
• 4oz. cup candied orange peel
• Frosting (We had to double this for the amount of cookies we yielded)
• 4 cups confectioners sugar
• ¾ cups shortening or butter
• 1 teaspoon vanilla
• 1/3 cup milk
