- 1½ cups diced leftover ham (or sausages)
- ½ cup black olives, sliced
- 1 small red onion, diced
- 1 red capsicum
- 1 cup courgette (raw) or cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup fresh basil, torn (optional)
- ⅓ cup olive oil
- 1 Tbsp Dijon mustard
- Juice of 1 lemon
- 2 Tbsp honey
- Salt and pepper, to taste
