Tater Tot Casserole – Fustini's Oils & Vinegars

Ingredients

• 1 tablespoon Fustini's Tuscan Herb olive oil
• 1 cup medium yellow onion, diced
• 2 garlic cloves, minced
• 2 lbs. lean ground beef
• Kosher salt and ground black pepper to taste
• 2 tablespoons flour
• 2 tablespoons Fustini's Thyme balsamic
• 1 cup chicken broth
• 2 cups grated cheddar cheese, divided
• 1 1/2 cups frozen peas
• 1 1/2 cups frozen corn
• 1 lb. frozen tater tots
• 3 slices cooked bacon, cut into 1/2" strips
• scallions, thinly sliced for garnish
