Crock Pot Hot and Sour Chicken Soup (Paleo)

Ingredients

• 3 pounds chicken breasts or thighs
• 1/2 large yellow onion chopped
• 3 cloves garlic crushed
• 1 can bamboo shoots drained
• 1 can sliced water chestnuts drained
• 1 1/2 tbsp rice vinegar
• 2 tbsp Tamari soy sauce or coconut aminos
• 1 tsp sesame seed oil
• 2 tsp hot chili oil
• 2 tbsp lemon juice
• 2 each portobello mushrooms sliced
• 2 cups chicken stock
• 1 cup water
