Ingredients

• 3 slices of multigrain bread, cut into 2cm cubes
• 4 small leeks
• 1 bunch of lettuce, washed and drained
• ¼ cup roughly chopped parsley
• 1 lemon, optional
• Salt and pepper
• Olive oil
• 2 roasted chicken breasts, store-bought or homemade
• 60ml buttermilk or greek yoghurt
• 3 tsp lemon juice
• 2 tsp dried herb; parsley, tarragon or mixed herbs
• 1 clove garlic, grated
• 1 tbsp roughly chopped parsley
