White Bean Sloppy Joes - Second Harvest
Use any type of white bean, chickpea, or lentil as the base. Serve with bread, rice, or any other grain in place of buns.
Ingredients
- 2 cups white beans
- 1.5 cups tomato sauce
- 1 small bell pepper, chopped
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 2 tbsp. tomato paste
- 1 tbsp. balsamic vinegar
- 1 tbsp. soy sauce
- 1 tbsp. Worcestershire sauce
- 1/2 tbsp. oil
- 2 tsp. brown sugar
- 1 tsp. ground cumin
- 1 tsp. onion powder
- 1/2 tsp. smoked paprika
- cayenne pepper to taste
- salt and pepper to taste
- Heat oil in a skillet, add onion and pepper and sauté over medium heat for about 4-5 minutes.
- Add garlic, tomato sauce, tomato paste, balsamic vinegar, soy sauce, Worcestershire sauce, sugar, all spices, and let simmer for 4-5 more minutes.
- Taste the sauce and adjust flavor as needed.
- Add the beans and stir. Let simmer for 2-4 more minutes.
- Serve on burger buns and enjoy!
