curried cauliflower & carrots – farmtocurb

Ingredients

• 3 carrots
• 1 small yellow onion
• 1 teaspoon curry powder
• 2 teaspoon paprika
• ½ teaspoon ground cumin
• ½ tsp salt
• Black pepper
• 1 -2 Tbs neutral oil
• 1-2 Tablespoons unsalted butter, melted
• 1 tsp honey
• 2 teaspoons apple cider vinegar
• 1-inch nub of ginger
• 1 small clove garlic
