Coconut Sugar Cookies (Thick & Chewy!) - Pizzazzerie

Ingredients

• 2 sticks unsalted butter (softened, room temperature)
• 1 1/4 cups granulated sugar (plus 1/3 cup sugar for rolling)
• 1 large egg + 1 egg yolk
• 1/2 teaspoon vanilla extract
• 2 teaspoons coconut extract
• 2 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 3/4 teaspoon sea salt
• 1/2 cup unsweetened coconut flakes ((sweetened also works!))
