• 5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
• 2 -3 tablespoons chopped onions
• 1 lb ground beef (really lean is preferable)
• salt and pepper
• 2 cups milk (I use skim)
• 3 tablespoons butter
• 3 tablespoons flour
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 8 ounces shredded sharp cheddar cheese
• ketchup (optional condiment)
