Ingredients

  • 2 pounds lean ground turkey, chicken, beef or veal
  • 1 egg (or 2 egg whites)
  • Salt to taste
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 2 cloves garlic, crushed
  • 1/3 cup club soda or water (approximately)
  • 1/2 cup bread crumbs or matzah meal
  • 1 medium head green cabbage (8 cups shredded)
  • 2 or 3 medium carrots, grated
  • 3/4 cup thinly sliced red onion (or 6 green onions, sliced)
  • 2 to 3 cloves garlic, crushed
  • 1/3 cup canola oil
  • 1/3 cup rice vinegar
  • 1/4 cup sugar
  • 2 teaspoons Oriental sesame oil
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and cut in chunks
  • 2 medium onions, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 tablespoon olive or vegetable oil
  • 3 carrots, peeled and grated (about 1 cup)
  • 2 unpeeled zucchini, grated (about 2 cups)
  • 1/4 cup minced dill and/or parsley
  • 2 eggs
  • 1 cup matzah meal or bread crumbs
  • Salt and pepper, to taste
