Ingredients

• 2 firm, yet ripe peaches
• 1 thinly sliced onion
• 2 tomatoes or few cherry tomatoes, halved
• 1 small bag mixed greens
• 1/4 cup crumbled feta cheese
• several almonds, toasted
• 2 tsp extra virgin olive oil
• 1 tsp organic honey
• 1 tsp lemon juice
• Pinch of salt and freshly ground black pepper
