Roasted Veggie Bread Pudding

Ingredients

• 1 c Chicken stock or vegetable stock
• Chopped
• 1/2 c Monterey Jack cheese Grated
• 1/4 c Cream or half-and-half
• 4 lg Eggs
• 1/4 ts Dried thyme
• 1/2 c fennel bulb Diced, in 1/2-inch pieces
• 8 sl hearty bread Day-old or toasted, slice 1/2" thick
• 1/4 ts Dried rubbed sage
• 1/2 md Green bell pepper in 1/2" dice
• 1 2-pound Butternut (or Danish) squash cut 1/2 length, seeded
• 1 sm Yellow onion 5-6 oz -- halved, lengthwise
• 1/2 c Blue cheese Crumbled
• 1/2 c parsley Coarsely chopped
• 2 Cloves garlic crushed flat
• 2 ts olive oil
• Salt and Pepper to taste
• 1/4 lb Mushrooms coarsely chopped
