• 100g (1/2 cup) sugar + more for finishing
• 50g (1/4 cup) dark brown sugar
• 1/2 tsp vanilla
• 12 drops red food coloring
• 190g (1 1/2 cup) all-purpose flour
• 2.25g (1/2 tsp) baking soda
• 2.25g (1/2 tsp) baking powder

• 4 tsp ground ginger
• 1 Tbsp paprika
• 2 1/2 tsp dried lemongrass powder
• 2 tsp cumin
• 1/2 tsp cayenne
• 1/2 tsp cinnamon
• 1/2 tsp cardamom
• 1/2 tsp turmeric
• 1/8 tsp nutmeg
• 1/8 tsp cloves
