Ingredients
- 4-6 Sandwiches
- Bread of choice ( I used torta bread from Costco this time)
- 1 Eggplant sliced 1/2 inch thick.( peel or no peel)
- 1 red bell pepper
- 1 green bell pepper
- 4-6 slices of cheese Havarti,fresh mozzarella,provolone,monterey jack.
- 1-2 avocados sliced
- pesto sauce
- sundried tomatoes or fresh tomato sliced
- 2 eggs
- 1/2 cup panko crumbs
- salt
- oil for frying
