• 3 bell peppers
• 2 Tbsp. butter
• ½ red onion, diced
• 2 cups cooked chicken, shredded
• 1 8 oz. can tomato sauce
• 1 Tbsp. Fiesta Brand® Chili Powder
• 2 tsp. Fiesta Brand® Granulated Garlic Powder
• 1 tsp. Fiesta Brand® Paprika
• ½ tsp. Fiesta Brand® Cumin
• 2 tsp salt
• ½ cup chicken stock or water
• ½ cup frozen corn
• 1 medium zucchini, diced (about 1 ½ cups)
• 1 poblano chili, seeded & diced
• 1 14 oz. can black beans, drained and rinsed
• 1 ½ cups cooked rice
• 1 ½ cup shredded Monterrey Jack cheese
• Garnish: sour cream, avocado, chopped cilantro
