• 1/2 onion, finely chopped
• 1 clove garlic, crushed
• 1/4 cup (60 mL) fresh parsley, chopped
• 1/2 stalk celery, finely chopped
• bay leaves
• 1/2 cup (125 mL) dry white wine
• 1/2 cup (125 mL) water
