Ingredients

• 1 cup flour
• ⅓ cup icing sugar
• Pinch of salt
• 110g butter, ice cold
• 1 tablespoon water, cold
• 460g full-fat cream cheese, softened to room temperature
• ½ cup sugar
• ½ cup fresh cream, at room temperature
• 2 tablespoons fresh lemon juice
• 2 eggs, at room temperature
