Rukmini Iyer Chipotle Chicken with Black Beans | Easy Traybake

Ingredients

• 1 red onion, quartered
• 3 cloves of garlic, unpeeled
• 4 corn on the cob
• 8 free-range chicken thighs
• 150g chorizo, roughly chopped
• 3 tsp chipotle chilli flakes
• 1 tsp sea salt
• 2 tsp ground coriander
• 2 tbsp olive oil
• A handful of fresh coriander, chopped
• 1 x 400g tin of black beans, drained and rinsed
• 2 tbsp extra virgin olive oil
• 100g feta cheese, crumbled
• 2 limes, juice and zest
