Ingredients

• 250gms onion
• 45gms butter
• 4-5 cups beef stock
• 2 bay leaves
• 1/2t tarragon, chopped
• 2t lovage, chopped
• 2t chives, chopped
• 2T flour
• 1/2 cup dry white wine (optional)
• Grated cheddar cheese
• 1 slice bread per person
• Salt and pepper
