• 1 tablespoon curry powder
• 1 teaspoon salt
• Pinch ground black pepper
• 1 1/2 cups water, divided
• 1 cup peels and ends of carrots, garlic, and onions
• 2 tablespoons soy sauce
• 2 tablespoons maple syrup
• 1/2 teaspoon cornstarch
• 1 tablespoon neutral cooking oil
