• CHOCOLATE SAUCE-----
• 1/4 ts Cream of tartar
• 1/2 ts Instant coffee powder
• 3 lg Egg whites
• 1/3 c Unsweetened cocoa powder
• 4 tb Unsalted butter
• 1 c Whipping cream
• 1 ts Vanilla extract
• MOUSSE-----
• Chopped
• Chop
• 1 1/4 c Whipping cream -- chilled
• 3 tb Water
• 1/2 c Sugar
• 3 tb Unsalted butter
• 1/2 " pieces
