Ingredients

• 2 hake fillets, weighing approx. 250g
• 1 lemon, juiced and zested
• 150 g raw beetroot, chopped into small bite-size pieces
• 1/2 tsp oil
• Salt and pepper
• 80 g breadcrumbs
• 1 tbsp fresh dill, chopped
• 1 tbsp fresh parsley, chopped
• 30 g butter, melted
• 1 ripe avocado, chopped into bite-size pieces
• 60 g rocket and mixed leaves
• 3 tbsp French dressing, or dressing of choice
