• 100g unsalted butter, melted & cooled
• 3 tablespoons (50g) Natvia
• 2 Free Range eggs
• 1 peeled and grated apple
• 80ml butter milk (or milk soured with 2 teaspoons lemon juice)
• 2 teaspoons vanilla extract
• 2 cups (300g) self-raising flour
• 1 tablespoon baking powder
• ½ teaspoons each of mixed spice and ground cardamom
• ½ cup Vitarium drinking chocolate (or cocoa)
• ¾ cup dark chocolate bits
• 10 muffin cases
• Muffin tray to hold 10 muffins
