• 2 bags (each 8.8 oz) Carolina® White Jasmine Ready to Heat Rice
• 2 lbs beef honeycomb tripe
• 1 tsp salt
• 2 tbsp olive oil
• 1 onion, diced
• 3 cloves garlic, minced
• 2 cans (each 15.5 oz) cans white hominy, drained and rinsed
• 4 cups reduced-sodium beef broth
• 1 lb potatoes, chopped into 1-inch cubes
• 1/2 cup enchilada sauce
• 2 tbsp cilantro, finely chopped
