• 1¼ cups white onion, medium dice
• ½ lb. sirloin steak, sandwich sliced, ½-inch strips
• 1 Tbsp. fresh lime juice
• ½ tsp. Kosher Salt
• ¼ tsp. ground black pepper
• ½ cup poblano pepper, small dice
• ½ cup red bell pepper, small dice
• 1 Tbsp. jalapeño pepper, seeds removed, small dice
• 2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
• 8 corn or flour tortillas, warmed
