Ingredients

  • 12 sheets fillo pastry
  • 1 x 1-1.2kg guinea fowl
  • 1 stick cinnamon, broken
  • 1/2 bunch flat-leaf parsley, leaves chopped, stems reserved
  • 1/2 bunch coriander, leaves chopped, stems reserved
  • 150g salted butter, melted
  • 80g slivered almonds, coarsely crushed
  • 2 tablespoons extra virgin olive oil
  • 1 red onion, finely diced
  • 1 clove garlic, crushed
  • Salt flakes and freshly ground black pepper, to taste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • Freshly grated nutmeg, to taste
  • Pinch saffron threads, soaked in a little water
  • 2 eggs, lightly beaten
  • 1 tablespoon icing sugar
  • 1/2 teaspoon ground cinnamon
