Guinea Fowl Bisteeya - Be Inspired - Food Wine Travel
Bisteeya is a Moroccan pie traditionally made with pigeon, egg, almonds and pastry, but it works well with any poultry, including guinea fowl.
Ingredients
- 12 sheets fillo pastry
- 1 x 1-1.2kg guinea fowl
- 1 stick cinnamon, broken
- 1/2 bunch flat-leaf parsley, leaves chopped, stems reserved
- 1/2 bunch coriander, leaves chopped, stems reserved
- 150g salted butter, melted
- 80g slivered almonds, coarsely crushed
- 2 tablespoons extra virgin olive oil
- 1 red onion, finely diced
- 1 clove garlic, crushed
- Salt flakes and freshly ground black pepper, to taste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- Freshly grated nutmeg, to taste
- Pinch saffron threads, soaked in a little water
- 2 eggs, lightly beaten
- 1 tablespoon icing sugar
- 1/2 teaspoon ground cinnamon
