Ingredients

• 1 octopus weighing approx. 600 g (already cleaned, possibly by your fishmonger)
• 400 g zucchini
• 1 stalk of celery
• 1 sprig of parsley
• 1 carrot
• 3-4 black peppercorns
• 1 bay leaf
• 2 cloves of garlic, peeled
• 3 leaves of mint (+ 4 for garnishing)
• 1 sprig of rosemary
• 5 tbsp Extra Virgin Olive Oil
• ½ hot chilli pepper
